Gradual cooking process
A smoker barbecue consists of 2 parts. The grill part and the smoker part. Meat and other dishes are slowly cooked by the smoke released from the smoker part. This smoking process can last from 3 to 12 hours. Because the cooking process is gradual, there is no need for you to stay around. An occasional check under the lid is enough. Meat prepared this way remains nice and tender and shrinks less. Moreover, it cannot burn.
